About us |
OUR LABORATORY
The
Laboratory conducts cutting-edge research to better understand the nature and
the changes occurring to food; it also offers educational programs for
undergraduate and graduate students, as well as to staff training and services
to food enterprises. Among the subjects are the study, analysis, design and
development of food processes, including the food properties, the development of
innovative food products, the study of traditional foods, and the design
automatic control and monitoring systems. In addition, all aspects of the
chemistry and analysis of foods, including basic constituents and special
bioactives, and metabolomic studies are included as well.
